Brand New Bread Oriented Preservatives-Compound Bakery Master

Generally, food preservatives can retain the fressness of food and its action principle is to curb the growing of microbe, so food will not be affected by bacteria and its shelf life can be prolonged. However, to bread, we make it through the fermentation of microzyme in microbe, so whatever high-performance food preservatives can not be easily used in bread making.

So far, one way that most scientists adopted is to put one kind of preservatives—calcium propionate into bread making.(It can kill most of the bacteria in microbe except the microzyme ).But it has two disadvantages during application: one is that the dosage is big ,which will affect the bread safety and taste; the other one is that it will not kill microzyme , which will cause secondary pollution on finished bread. So the shelf life of bread is quite short , 1-2 day.

To solve that problem, our colleagues in R& D department of company do thousands of experiments during late 10 years and finally,we invent compound high-performance bread oriented preservative—Bakery Master, which can defer its preserved performance.Its action principle is to put three high-efficient preservatives together as key materials,including potassium sorbate ,calcium propionate and sodium dehydroacetate and blend them,then put proportional wainscoting to cover the three to form microcapsule preservative. And we have acquired national patent.
During bread making, mingle our Bakery Master and flour(use ratio is about 0.2%) ,then blend together with other ingredients. When temperature is above 100 ℃ and bread are being baked ,the wainscoting begins to melt and bakery master acts as preservative .The bread taste & shape will not be affected.

Use Effect: with comparative tests , plain bread will mildew within 1-2 day under high temperature & humidity; Bread that adds 2%-4% calcium propionate can only prolong its shelf life to 3-4 day. With our compound bakery master, we can guarantee that the bread will not mildew within 14 days under the same conditions .For the time being, our bakery master enjoys great popularity among many big food manufacturing enterprises around the world, especially Turkey. And the results are highly visible as proved.
